SHRIMP CEVICHE

 


With Private Selection staples and a few supporting ingredients, you can easily put this ceviche in reach of your waiting tastebuds! ​

🦐 Argentinean Red Shrimp​

🥒 Mini Seedless Cucumbers​

🍅 Petite Medley Snacking Tomatoes​

🥑 ripe avocado​

🧅 red onion​

🌱 fresh cilantro​

🌶️ fresh jalapeño​

🍋 🍋‍🟩fresh lemon & lime juice​

🥖 French Baguette​

SHRIMP CEVICHE

Ingredients:​

1 lb Private Selection Peeled & Deveined Argentinean Red Shrimp, thawed​

Juice of two limes​

Juice of two lemons​

10 oz Private Selection Medley Snacking Tomatoes, diced​

3/4 cup red onion, diced​

1/2 cup fresh cilantro, chopped​

1 fresh jalapeńo, diced​

Salt & pepper to taste​

2 Private Selection Seedless Mini Cucumbers, diced​

1 ripe avocado, diced​

Crostini, tortilla chips, etc. for dipping​

Bring a pot of salted water to a boil. Meanwhile, prepare a colander and a bowl of ice water. Add shrimp to boiling water and cook for 1 minute. Drain shrimp in the colander, then transfer to the ice water bath until cool. Drain well, pat dry, then chop shrimp into ½" pieces.​

Combine shrimp, lime juice, lemon juice, tomatoes, onion, cilantro, jalapeń0, salt, and pepper. Cover and refrigerate for at least 1 hour. When ready to serve, toss in cucumber and avocado. Serve with crostini or tortilla chips and enjoy!
