SHRIMP CEVICHE
Ingredients:
1 lb Private Selection Peeled & Deveined Argentinean Red Shrimp, thawed
Juice of two limes
Juice of two lemons
10 oz Private Selection Medley Snacking Tomatoes, diced
3/4 cup red onion, diced
1/2 cup fresh cilantro, chopped
1 fresh jalapeńo, diced
Salt & pepper to taste
2 Private Selection Seedless Mini Cucumbers, diced
1 ripe avocado, diced
Crostini, tortilla chips, etc. for dipping
Bring a pot of salted water to a boil. Meanwhile, prepare a colander and a bowl of ice water. Add shrimp to boiling water and cook for 1 minute. Drain shrimp in the colander, then transfer to the ice water bath until cool. Drain well, pat dry, then chop shrimp into ½" pieces.
Combine shrimp, lime juice, lemon juice, tomatoes, onion, cilantro, jalapeń0, salt, and pepper. Cover and refrigerate for at least 1 hour. When ready to serve, toss in cucumber and avocado. Serve with crostini or tortilla chips and enjoy!
