Ingredients:
- 1 pound beef sirloin or flank steak, cut into 1-inch chunks
- 1 cup BBQ sauce of your choice
- 1 large red onion, cut into wedges
- 2 bell peppers, cut into chunks
- 1 large zucchini, cut into rounds
- 1/4 cup olive oil (optional)
- Salt and pepper, to taste
- 8-10 wooden skewers (soaked in water for 30 minutes to prevent burning)
Instructions:
- In a large bowl, mix together the BBQ sauce, olive oil (if using), salt, and pepper.
- Add the beef chunks to the bowl and turn to coat.
- Cover the bowl and marinate the beef in the refrigerator for at least 30 minutes, or up to 4 hours.
- Heat a grill to medium-high heat.
- Thread the beef chunks, red onion, bell peppers, and zucchini onto the skewers, alternating the ingredients.
- Place the skewers on the grill and cook for 8-10 minutes, turning every 2-3 minutes, or until the internal temperature of the beef reaches 145°F.
- Brush the skewers with additional BBQ sauce during the last 5 minutes of cooking, if desired.
- Serve hot.
