Ingredients:
- 2 large bell peppers, sliced
- 2 large zucchini, sliced
- 2 large red onions, sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- Salt and pepper, to taste
Instructions:
- In a large bowl, mix together the olive oil, lemon juice, basil, oregano, salt, and pepper.
- Add the sliced bell peppers, zucchini, and red onions to the bowl and turn to coat.
- Cover the bowl and marinate the vegetables in the refrigerator for at least 30 minutes, or up to 2 hours.
- Heat a grill to medium-high heat.
- Remove the vegetables from the marinade and discard any remaining marinade.
- Place the vegetables on the grill and cook for 4-5 minutes on each side, or until charred and tender.
- Serve hot.
