BBQ Vegetables, Ingredients and Cooking Instructions

 



Ingredients:

  • 2 large bell peppers, sliced
  • 2 large zucchini, sliced
  • 2 large red onions, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • Salt and pepper, to taste

Instructions:

  1. In a large bowl, mix together the olive oil, lemon juice, basil, oregano, salt, and pepper.
  2. Add the sliced bell peppers, zucchini, and red onions to the bowl and turn to coat.
  3. Cover the bowl and marinate the vegetables in the refrigerator for at least 30 minutes, or up to 2 hours.
  4. Heat a grill to medium-high heat.
  5. Remove the vegetables from the marinade and discard any remaining marinade.
  6. Place the vegetables on the grill and cook for 4-5 minutes on each side, or until charred and tender.
  7. Serve hot.
