Instructions for making classic fried chicken:

  1. In a large bowl, combine the chicken pieces with buttermilk or milk and let it marinate in the refrigerator for at least 30 minutes or up to 8 hours.
  2. In a separate bowl, mix together flour, salt, pepper, and any additional spices.
  3. Remove the chicken from the marinade and coat each piece in the flour mixture.
  4. Heat the oil or shortening in a heavy-bottomed pan to 350°F (175°C).
  5. Carefully place the coated chicken pieces in the hot oil and fry until the exterior is golden brown and crispy, about 10-12 minutes for drumsticks and 8-10 minutes for wings.
  6. Remove from the pan and drain on paper towels.
