VEGAN SAVOURY OATS

 What we need

2 cups old fashioned oats 

3.5 cups (+ more to taste) veggie stock ⁠or water⁠

1 tbsp olive oil 

150g mushrooms ⁠

1 tbsp fresh thyme leaves⁠

1 garlic clove, minced⁠

80g kale, chopped⁠

Salt to taste⁠

1 tbsp sweet miso 

6 tbsp nutritional yeast 

or 4 tbsp vegan parmesan 

1 tbsp toasted sesame oil 

Apple cider vinegar or lemon to taste ⁠

1 avocado⁠

2 tbsp plant based yoghurt 

Chilli oil, sesame seeds + sesame oil to serve ⁠

METHOD⁠

Add the oats and stock to a pan. Simmer for 5 - 6 mins or until to your liking. Option to use water if you prefer but stock is tastier. Add miso, nutritional yeast  or vegan parmesan , salt, pepper, lemon or apple cider vinegar + toasted sesame oil⁠. Adjust stock to desired consistency.⁠

Heat olive oil in a frying pan. Add mushrooms, garlic, + thyme. Sauté for a few mins, add kale + pinch of salt + cook for 1 - 2 mins until kale is wilted + mushrooms are cooked to your liking. ⁠

Top savoury oats with mush / kale mix, avocado, plant based yog, chilli oil, sesame seeds + toasted sesame oil.⁠ Don't skip all the oils guys, it's what makes it tastier.
