🍗 One-Pan Garlic Herb Chicken with Roasted Potatoes & Green Beans 🥔🌿

🛒 Ingredients

🍗 Chicken:

2 large chicken breasts

2 tbsp olive oil

3 cloves garlic, minced 🧄

1 tsp paprika

1 tsp dried thyme

Salt & black pepper

🥔 Potatoes:

700 g baby potatoes, halved

2 tbsp olive oil

Salt, pepper

1 tbsp chopped parsley 🌿

🥬 Green Beans:

2 cups green beans

1 tbsp olive oil

Salt

🍋 Pan Sauce:

½ cup chicken broth

2 tbsp lemon juice 🍋

1 tbsp butter 🧈

1 tsp dried herbs

👨‍🍳 Instructions

Preheat oven to 200°C (400°F). Toss potatoes with olive oil, salt, and pepper. Roast for 20 minutes.

Season chicken with olive oil, garlic, paprika, thyme, salt, and pepper.

Remove tray, push potatoes aside, and place chicken in the center. Add green beans to the tray.

Mix broth, lemon juice, butter, and herbs, then pour over everything.

Roast for another 20–25 minutes until chicken is cooked through (internal temp 75°C).

Let rest, slice chicken, and spoon pan juices over the top. Garnish with parsley.

💡 Tips

Broil for 3–5 minutes for extra browning
