Seared Scallops with Cilantro Lime Sauce ☀️

Ingredients:

For the Scallops:

8 large sea scallops

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional)

1 lime, juiced

For the Cilantro Lime Sauce:

1/2 cup mayonnaise

1/4 cup sour cream

1/4 cup chopped cilantro

1 tablespoon lime juice

1 teaspoon chili powder

1/2 teaspoon cumin

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/8 teaspoon cayenne pepper (optional)

Instructions:

Prepare the Scallops: Pat the scallops dry with paper towels. In a bowl, combine the scallops, olive oil, paprika, garlic powder, salt, pepper, and cayenne pepper (if using). Toss to coat. Let the scallops marinate for at least 30 minutes, or up to 24 hours.

Sear the Scallops: Heat a large skillet over medium-high heat. Add the scallops and sear for 2-3 minutes per side, or until golden brown and cooked through.

Make the Cilantro Lime Sauce: In a small bowl, whisk together the mayonnaise, sour cream, cilantro, lime juice, chili powder, cumin, garlic powder, salt, pepper, and cayenne pepper (if using).

Serve: Arrange the seared scallops on plates. Drizzle with the Cilantro Lime Sauce and garnish with fresh cilantro and lime wedges.

Tips:

For a spicier dish, add more cayenne pepper to the seasoning.

Serve the scallops with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.

Garlic Shrimp Pasta

Garlic Shrimp Pasta 🥘

1 lb medium shrimp, deveined and tails removed

1 lb spaghetti noodles (more or less, depending on family size)

6 -8 garlic cloves, according to personal taste, minced

1/4 cup butter

olive oil (3 drizzles)

italian seasoning

fresh ground pepper

red pepper flakes

salt

herbs (according to taste)

1 Boil pasta in water till tender, save 1 cup of pasta water for use later. I always put some oil, salt, and fresh herbs in with my pasta when I boil it. Drain and set aside when done.

2 While pasta is boiling, wash shrimp.

3 Melt butter over medium heat. Add shrimp.

4 Let cook till a little pink and starting to curl. Then add garlic.

5 Cook 5-7 min., add oil. Continue to stir till shrimp is pink and curled.

6 Add pasta to skillet. Add seasonings. Add just enough saved pasta water till it is not dry but not swimming in liquid either. Depending on amount of pasta this requires 1/2 the cup or all of it. Start with adding 1/4 of it then work up from there.

7 Keep tossing all ingredients around in skillet till all is incorporated and hot.

Enjoy😋❤️

Fried Cabbage with Bacon, Onion, and Garlic - Don't LOSE this Recipe

Fried Cabbage with Bacon, Onion, and Garlic - Don't LOSE this Recipe

Ingredients:

    6 slices of bacon, chopped

    1 large onion, thinly sliced

    3 cloves garlic, minced

1 medium head of cabbage, cored and roughly chopped

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper (adjust to taste)

1/2 teaspoon smoked paprika (optional, for extra flavor)

1 tablespoon butter (optional, for richness)

Directions:

In a large skillet over medium heat, cook the chopped bacon until crispy, stirring occasionally. Remove the bacon with a slotted spoon and set it aside, leaving the bacon grease in the pan.

Add the sliced onion to the skillet with the bacon grease and sauté for 2-3 minutes, until softened. Stir in the minced garlic and cook for another 30 seconds to 1 minute until fragrant.

Add the chopped cabbage to the skillet, tossing it to coat in the bacon grease and mixing it with the onions and garlic.

Season the cabbage with salt, pepper, and smoked paprika (if using). Stir well and cook over medium heat for 10-12 minutes, stirring occasionally, until the cabbage is tender and slightly caramelized.

Stir the crispy bacon back into the cabbage. For added richness, melt in a tablespoon of butter and mix well.

Serve the fried cabbage as a side dish or light main course and enjoy!

Savor every bite! ❤️
